Ingredients

  • 4 garlic cloves (finely chopped)

  • 4 tablespoons finely chopped sage leaves

  • Zest of 1 lemon (grated)

  • Salt and pepper

  • 4 veal loin chops

  • 2 tablespoons olive oil

  • Juice of 1/2 lemon

Serves 4


Method:

  1. Preheat a barbecue or grill. Mix the garlic, sage and lemon zest together in a small bowl with salt and pepper.

  2. Put the chops in a mixing bowl, and add the olive oil and lemon juice. Add the garlic mixture, turn the chops over and marinate for 1 hour.

  3. Brush most of the garlic and herb off the chops and pat dry with kitchen paper before cooking.

  4. Put the chops on the barbecue or grill and allow to brown lightly. Turn the chops frequently so that they cook evenly and brown on both sides. Cook for 10 to 15 minutes. Serve hot with mashed potatoes.
