Ingredients

3 tomatoes, diced

1 cucumber, peeled
(if desired) and diced

3 scallions, sliced
-
1 bunch of parsley,
stems removed, leaves chopped

1/4 cup fresh lemon
juice
-
1/2 cup extra-virgin
olive oil
-
Salt and pepper
-
1 small can sliced
black olives
Serves 4
Method:

Combine the tomatoes, cucumber, scallions, and
parsley; chill.

Combine the lemon juice, olive oil,
and salt and pepper to taste, and toss with the
vegetables. Top with the olives, and serve.
