Sununer Tuna Salad

Ingredients

1 medium cucumber,
cut into chunks

1/3 cup sweet red
onion, sliced

1/3 cup chopped fresh
parsley
-
1/2 large green
pepper, cut into small strips
-
15 cherry tomatoes,
quartered
-
1 can (6 ounces)
tuna, drained
-
1/4 cup extra-virgin
olive oil
-
2 tablespoons wine
vinegar
-
1 clove garlic,
crushed
-
1/4 teaspoon salt
-
1/8 teaspoon pepper
Serves 2
Method:

Put the cucumber, onion, parsley, pepper, tomatoes,
and tuna in a salad bowl.
-
In a separate
bowl,
combine the oil, vinegar, garlic, salt, and pepper.
Pour the
mixture over the salad, toss, and serve.
