Ingredients

  • 2.3 kg/5lb fish trimmings

  • 5 onions (quartered)

  • 5 celery sticks, including leaves (chopped)

  • 5 sprigs of parsley

  • 5 bay leaves

  • 1 teaspoon dried thyme

  • Salt and freshly ground black pepper

  • 750ml/1 1/4pt dry white wine

  • 3 liters/5pt water

Makes 1.8liters/3pt


Method:

  1. Place all the ingredients in a large saucepan set over a high heat. Bring to boiling point and lower the heat.

  2. Simmer for about 40 minutes, without a lid, then strain.
