Ingredients

trimmings

5 onions (quartered)

5 celery sticks, including leaves (chopped)

5 sprigs of parsley

5 bay leaves

1 teaspoon dried thyme

Salt and freshly ground black pepper

750ml/1 1/4pt dry white wine

liters/5pt water
Makes 1.8liters/3pt
Method:

Place all the ingredients in a
large saucepan set over a high heat. Bring to
boiling point and lower the heat.

Simmer for about 40 minutes,
without a lid, then strain.
