Sauce, Dressing and Stocks Recipes - Tomato Sauce Recipe

Ingredients

  • 300ml/1/2pt white vinegar

  • 1 teaspoon mixed spice

  • 1.4kg/3lb ripe tomatoes (sliced)

  • 25g/1oz salt

  • 100g/4oz sugar

Makes 600ml/1pt


Method:

  1. Place the vinegar and the mixed spice in a saucepan, bring to the boil and remove from the heat. Cover and leave to infuse for 3 to 4 hours.

  2. Place the tomatoes in a heavy-based saucepan and simmer until pulpy.

  3. Rub the pulp through a sieve into a bowl.

  4. Clean the saucepan and add the strained pulp to it. Add the salt and cook gently until mixture begins to thicken . Add the sugar and infused vinegar, stirring until fully dissolved.

  5. Continue simmering, stirring occasionally, until the mixture thickens to the consistency of whipped cream.
