Starters Recipes - Carrot Coriander Soup Recipe

Ingredients

  • 175g/6oz onion (diced)

  • 50g/2oz butter

  • 500g/1lb 2oz carrots (sliced)

  • 1 garlic clove (finely chopped)

  • Handful of fresh coriander (chopped)

  • 1.2 liters/2pt chicken or vegetable stock

  • 1 teaspoon caster sugar

  • 150ml/1/4pt whipping cream

Serves 6


Method:

  1. Sweat the onion in the butter until soft. Add the carrots to the pan and cook, stirring from time to time, for a further 5 minutes.

  2. Add the garlic and most of the coriander. Pour the stock over the top, add the sugar and bring to the boil. Lower the heat and simmer for 30 minutes.

  3. Put the contents of the pan into a food processor or blender and blend to a smooth puree.

  4. Pour back into a clean pan and add the whipping cream. Taste and adjust the seasoning, then heat the soup through gently, stirring.

  5. Scatter the reserved coriander leaves before serving.
