Ingredients
For the tomato sauce:

150ml/1/4pt passata
-
150ml/1/4pt beef stock
-

teaspoons caster sugar
Serves 4
Method:

For the filling, heat the oil in a pan. Add the
minced beef, pine nuts and onion. Cook for 5
minutes until brown and sealed.

Stir in the fresh
coriander, cumin and tomato puree. Cook for a
further 3 minutes and season well.

Lay the vine
leaves shiny side down on a work surface. Place some
of the filling in the centre of each leaf and fold
the stalk end over the filling. Roll up the parcel
towards the tip of the leaf and place in a lightly
greased flameproof casserole dish, seam side down.

For the sauce, mix together the passata, stock and
sugar and pour over each vine leaf. Cover and cook
on a moderate heat for a few minutes. Reduce the
heat and cook for a further 30 minutes. Serve hot.
