Starters Recipes - Garlic Soup Recipe

Ingredients

  • 4 tablespoons oil

  • 3 large onions (chopped)

  • 16 garlic cloves (chopped)

  • 150ml/1/4pt white wine

  • 350g/12oz potatoes (roughly chopped)

  • 2 liters/3 1/2pt vegetable stock

  • 125ml/4fl oz whipping cream

Serves 6


Method:

  1. Heat the oil in a heavy-based pan, add the onions and garlic, then cover and cook over a low heat, stirring occasionally, for 20 to 30 minutes or until very soft.

  2. Add the wine and bring to the boil. Boil until the liquid has reduced by half.

  3. Add the potatoes and stock, bring to the boil and simmer, uncovered, for 45 minutes.

  4. Allow to cool slightly, then pour into a blender or food processor and blend until smooth. Add the cream and pour into the pan to reheat. Serve hot.
