Ingredients

225g/8oz dried
chickpeas (soaked overnight) or 500g/1lb 2oz canned
Juice of 2
large lemons

150ml/1/4pt tahini
(paste of ground sesame seeds)

4 tablespoons
olive oil
-
2 garlic cloves (crushed)

Salt and pepper
Serves 8
Method:

Drain the chickpeas, place in saucepan and cover
with cold water. Bring to the boil and simmer gently
for 2 hours or until tender.

Drain the chickpeas,
reserving a little of the liquid. Put them in a
blender and gradually add the reserved liquid and
the lemon juice, blending well after each addition,
to form a smooth puree.

Add the tahini paste,
olive oil and garlic. Season to taste. Blend again
until smooth.

Serve with warm pitta bread and
olives.
