Starters Recipes - Miniature Seafood Quiches Recipe

Ingredients

  • 2 prepared pie crusts

  • Butter for greasing

  • 100g/4oz Emmental cheese (grated)

  • 250g/9oz seafood spread

  • 2 onions (diced)

  • 2 eggs

  • 125ml/4fl oz single cream

  • 1/4 teaspoon salt

  • 2 tablespoons white wine

Serves 4-8


Method:

  1. Preheat the oven to 190°C/375°F/Gas mark 5.

  2. Allow the pie crusts to stand at room temperature for 15 to 20 minutes. Grease 24 miniature muffin cups with butter.

  3. Unfold the pie crust and, using a 6cm/2 1/2in cookie cutter, cut 12 circles. Repeat with the remaining pie crust. Press 1 circle of dough into each sprayed muffin cup.

  4. Divide the cheese evenly between the cups. Add 2 teaspoons of seafood spread to each. Top with some diced onion.

  5. Mix together the eggs, cream, salt and wine in a small bowl. Beat well and pour the mixture into the crusts.

  6. Bake for 25 to 30 minutes or until golden brown. Serve warm.
