Put the gram flour into a bowl, add the cayenne
pepper, coriander, cumin and mint. Stir in the
yogurt, water and onion and mix well.
Fill a
large frying pan a third full with the oil and
heat until very hot. Drop heaped spoonfuls of
the mixture, a few at a time, into the hot oil
and use 2 forks to neaten the mixture into
balls.
Fry the bhajias until golden brown and
cooked through, turning frequently.
Remove
with a slotted spoon and drain on kitchen paper.
Serve hot.
