Starters Recipes - Minted Onion Bhajias Recipe

Ingredients

  • 100g/4oz gram flour

  • 1/4 teaspoon cayenne pepper

  • 1/2 teaspoon ground coriander

  • 1/2 teaspoon ground cumin

  • 1 tablespoon chopped fresh mint

  • 4 tablespoons drained thick yogurt

  • 75ml/3fl oz cold water

  • 1 large onion (quartered and thinly sliced)

  • Vegetable oil for deep-frying

Serves 4


Method:

  1. Put the gram flour into a bowl, add the cayenne pepper, coriander, cumin and mint. Stir in the yogurt, water and onion and mix well.

  2. Fill a large frying pan a third full with the oil and heat until very hot. Drop heaped spoonfuls of the mixture, a few at a time, into the hot oil and use 2 forks to neaten the mixture into balls.

  3. Fry the bhajias until golden brown and cooked through, turning frequently.

  4. Remove with a slotted spoon and drain on kitchen paper. Serve hot.
