Ingredients

  • 1 tablespoon vegetable oil

  • 100g/4oz lean pork mince

  • 1 garlic clove (crushed]

  • 1/2 onion (finely chopped)

  • 1 tablespoon finely chopped bamboo shoots

  • 2 red chilies (finely chopped)

  • 2 teaspoons soy sauce

  • 1 tablespoon oyster sauce

  • 2 teaspoons tomato puree

  • 1 teaspoon sesame oil

  • 100g/4oz self-raising flour

  • Salt

  • 25g/1oz lard

  • 1 tablespoon caster sugar

  • 2 teaspoons sesame seeds

Serves 8


Method:

  1. Heat the oil in a frying pan. Add the pork, garlic, onion, bamboo shoots and chilies and stir-fry for 5 minutes. Add the soy sauce, oyster sauce and tomato puree and cook for 5 minutes, stirring occasionally. Stir in the sesame oil and leave to cool.

  2. Sift the flour and a few pinches of salt into a mixing bowl. Rub in the lard finely. . Add about 4 tablespoons of water and mix to form a soft dough.

  3. Divide the dough into 24 portions. Form each portion into a ball and roll out on to a lightly floured surface to an 7.5cm/3in round.

  4. Put a teaspoon of pork mixture into the centre of each round. Dampen the dough edges and gather together, sealing well by twisting together to form a pouch.

  5. Cook in a steamer over simmering water for about 15 minutes. Serve hot.
