Starters Recipes - Potato Wedges with Chive Yogurt Dressing Recipe

Ingredients

  • 4 large baking potatoes

  • 3 tablespoons olive oil

  • 1 teaspoon celery salt

  • 1/2 teaspoon garlic salt

  • Salt and pepper

  • 200g/7oz natural yogurt

  • 1 bunch fresh chives

Serves 4


Method:

  1. Preheat the oven to 200°C/400°F/Gas mark 6.

  2. Scrub the potatoes and cut each lengthways into 6 pieces. Put the wedges in a large, non-stick roasting pan, add the oil and toss to coat. Mix together the salts and sprinkle over the potatoes.

  3. Roast the potatoes in the oven for 45 minutes, or until crisp and golden, turning them several times.

  4. Turn the cooked wedges into a warm serving bowl and season with salt and pepper. Spoon the yogurt into a small serving bowl, snip in most of the chives and stir well.

  5. Sprinkle the rest of the chives over the wedges and serve immediately.
