Ingredients

2 garlic cloves (chopped)

5cm/2in piece of fresh galangal (peeled and chopped)

stalk of lemon grass (finely chopped)

kaffir lime leaves (chopped)

teaspoon dried red chili flakes

tablespoon fish sauce

1 tablespoon lime juice

teaspoon caster sugar

25g/1oz creamed
coconut (chopped)

75ml/3fl oz boiling
water

uncooked prawns (peeled, with tails left intact)

large pieces of banana leaf
Serves 4
Method:
-
Place the garlic, shallot, galangal, lemon
grass, kaffir lime leaves, chili flakes, chili
oil, fish sauce, lime juice and sugar in a food
processor or blender and blend to produce a
thick paste.

Place the creamed coconut in a
bowl and pour the boiling water over. Stir to
dissolve the coconut, then add to the spice
paste. Mix well.

Place the prawns in a bowl and add the coconut
spice mixture. Stir to coat the prawns evenly.
Lay the 4 pieces of banana leaf on a flat
surface.

Place 6 prawns and a quarter of the
coconut mixture in the centre of each leaf. Wrap
up the leaves to enclose the prawns to form neat
parcels.

Steam the prawn parcels in a steamer
over boiling water for 8 to 10 minutes.

To
serve, remove the prawns from the leaves and
place on 4 serving plates. Pour the coconut
sauce into a bowl and whisk briefly until
smooth. Pour a little sauce over each portion
and serve immediately.
