Starters Recipes - Prawns Steamed in Banana Leaves Recipe

Ingredients

  • 2 garlic cloves (chopped)

  • 1 shallot (chopped)

  • 5cm/2in piece of fresh galangal (peeled and chopped)

  • 1 stalk of lemon grass (finely chopped)

  • 3 kaffir lime leaves (chopped)

  • 1 teaspoon dried red chili flakes

  • 2 teaspoons chili oil

  • 1 tablespoon fish sauce

  • 1 tablespoon lime juice

  • 1/4 teaspoon caster sugar

  • 25g/1oz creamed coconut (chopped)

  • 75ml/3fl oz boiling water

  • 24 uncooked prawns (peeled, with tails left intact)

  • 4 large pieces of banana leaf

Serves 4


Method:

  1. Place the garlic, shallot, galangal, lemon grass, kaffir lime leaves, chili flakes, chili oil, fish sauce, lime juice and sugar in a food processor or blender and blend to produce a thick paste.

  2. Place the creamed coconut in a bowl and pour the boiling water over. Stir to dissolve the coconut, then add to the spice paste. Mix well.

  3. Place the prawns in a bowl and add the coconut spice mixture. Stir to coat the prawns evenly. Lay the 4 pieces of banana leaf on a flat surface.

  4. Place 6 prawns and a quarter of the coconut mixture in the centre of each leaf. Wrap up the leaves to enclose the prawns to form neat parcels.

  5. Steam the prawn parcels in a steamer over boiling water for 8 to 10 minutes.

  6. To serve, remove the prawns from the leaves and place on 4 serving plates. Pour the coconut sauce into a bowl and whisk briefly until smooth. Pour a little sauce over each portion and serve immediately.
