Starters Recipes - Scotch Broth Recipe

Ingredients

  • 1.1 kg/2 1/2lb neck of lamb (cubed)

  • 1.8 liters/3pt water

  • 1 large onion (chopped)

  • 50g/2oz pearl barley

  • Bouquet garni

  • 1 large carrot (chopped)

  • 1 turnip (chopped)

  • 3 leeks (chopped)

  • 1/2 small white cabbage (shredded)

  • Salt and pepper

Serves 6-8


Method:

  1. Put the lamb and water into a large saucepan and bring to the boil. Skim off any grey foam, then stir in the onion, pearl barley and bouquet garni.

  2. Bring the soup back to the boil, then partly cover the pan and simmer gently for 1 hour.

  3. Add the remaining vegetables and the seasoning. Bring to the boil again, partly cover and simmer for 35 minutes.

  4. Use a spoon to remove surplus fat from the top of the soup. Discard the bouquet garni and serve hot.
