Starters Recipes - Sesame Seed Prawn Toasts Recipe

Ingredients

  • 225g/8oz uncooked peeled prawns (finely chopped)

  • 25g/1oz lard

  • 1 tablespoon corn flour

  • 1 egg white (lightly beaten)

  • 1/2 spring onion (finely chopped)

  • 1/2 teaspoon finely chopped root ginger

  • 1 tablespoon dry sherry

  • 100g/4oz white sesame seeds

  • 6 slices white bread (remove crusts)

  • Vegetable oil for deep-frying

Serves 4


Method:

  1. In a mixing bowl, mash the prawns and the lard together with a fork to form a smooth paste.

  2. In a small bowl mix the corn flour with a teaspoon of water, using a small metal spoon make a paste.

  3. Add the egg white, spring onions, root ginger, sherry and corn flour paste to the prawns and lard.

  4. Spread the sesame seeds evenly on a large plate or tray. Spread the prawn paste thickly on one side of each slice of bread. Press the bread, spread side down, on to the seeds.

  5. Heat the oil in a wok until medium-hot and fry 2 slices of the sesame bread at a time, spread side down, for 2 minutes. Remove and drain on kitchen paper. Serve hot.
