Smoked Trout with
Cucumber a Cumin

Ingredients
Serves 4
Method:

Peel the cucumber, cut it in half lengthways and
scoop out the seeds with a teaspoon. Cut the flesh
into thin strips, place in a colander and sprinkle
with salt. Leave for 30 minutes.

Dry-fry the cumin
seeds in a frying pan until toasted. Flake the trout
into large pieces.

Rinse the cucumber under the
cold tap, drain and pat dry with kitchen paper.

Place in a bowl, sprinkle the toasted cumin seeds
over the top and mix in the
crème fraiche.

Serve at room temperature, with trout pieces on
top of the cucumber mixture.
