Starters Recipes - Smoked Trout with Cucumber a Cumin Recipe

Ingredients

  • 1/2 large cucumber

  • Salt

  • 1 tablespoon cumin seeds

  • 250g/9oz smoked trout fillets

  • 150g/5oz crème fraiche

Serves 4


Method:

  1. Peel the cucumber, cut it in half lengthways and scoop out the seeds with a teaspoon. Cut the flesh into thin strips, place in a colander and sprinkle with salt. Leave for 30 minutes.

  2. Dry-fry the cumin seeds in a frying pan until toasted. Flake the trout into large pieces.

  3. Rinse the cucumber under the cold tap, drain and pat dry with kitchen paper.

  4. Place in a bowl, sprinkle the toasted cumin seeds over the top and mix in the crème fraiche.

  5. Serve at room temperature, with trout pieces on top of the cucumber mixture.
