Method:

Preheat the oven
to 190°C/375°F/Gas mark 5.

Place the tomatoes in
a bowl of just- boiled water for 30 seconds,
then skin and chop.
-
Remove the mushroom
stalks. Chop the stalks and mix with the chopped
tomatoes, grated onion, butter, parsley and
seasoning.

Put the mushroom tops on a large greased
ovenproof dish. Fill each mushroom with the
stuffing.
-
Cover with aluminum foil and bake in
the oven for about 30 minutes.
