Ingredients

225g/8oz
smoked cod's roe

1 garlic clove
(crushed)

50g/2oz white breadcrumbs
-
1 small onion (finely
chopped)

Grated zest and juice
of 1 lemon

150ml/1/4pt olive oil
-
100ml/3 1/2fl oz hot
water

Pitta bread
Serves 6
Method:
-
Skin the smoked cod's roe and break into pieces.
Place in a blender or food processor and blend
to form a puree.
-
Add the garlic, breadcrumbs,
onion, lemon zest and juice and blend for a few
more seconds.

Gradually add the oil and blend
well after each addition until smooth. Blend in
the hot water and pepper.

Spoon into a serving
dish and chill for at least 1 hour. Serve with pitta bread.
