Ingredients
Serves 4
Method:

Melt the butter in a large saucepan. Add the
tomatoes and cook for 5 minutes until the skins
start to wrinkle. Add the stock to the pan,
bring to the boil, cover and simmer for 10
minutes.

Lightly toast the almonds under a
medium grill until they are golden brown.

Remove the soup from the heat, pour into a
blender or food processor and blend until
smooth. Pass the soup through a sieve to remove
any tomato skin or pips.

Place the soup back
in the pan and reheat. Stir in the milk,
almonds and sugar. Serve
hot.
