Starters Recipes - Tomato Soup Recipe

Ingredients

  • 50g/2oz butter

  • 700g/1 1/2lb plum tomatoes (roughly chopped)

  • 900ml/1 1/2pt hot vegetable stock

  • 50g/2oz ground almonds

  • 150ml/1/4pt milk

  • 1 teaspoon sugar

Serves 4


Method:

  1. Melt the butter in a large saucepan. Add the tomatoes and cook for 5 minutes until the skins start to wrinkle. Add the stock to the pan, bring to the boil, cover and simmer for 10 minutes.

  2. Lightly toast the almonds under a medium grill until they are golden brown.

  3. Remove the soup from the heat, pour into a blender or food processor and blend until smooth. Pass the soup through a sieve to remove any tomato skin or pips.

  4. Place the soup back in the pan and reheat. Stir in the milk, almonds and sugar. Serve hot.
