Bean Vegetable
Recipe
Ingredients

4 tablespoons
sesame oil

8 spring onions
(thinly sliced)

2 garlic cloves
(crushed)

225g/8oz button
mushrooms (sliced)

1 red pepper (cut into thin
strips)

1 green pepper
(cut into thin strips)

2 large carrots (cut into
matchsticks)

4 tablespoons black bean sauce
-
100ml/3 1/2fl oz warm water
-
225g/8oz bean sprouts
Serves 4
Method:
-
Heat the oil in a
large preheated wok until very hot. Add the
spring onions and garlic and stir-fry for 30
seconds.

Add the mushrooms, peppers and carrots.
Stir-fry for 5 to 6 minutes over a high heat
until the vegetables are just beginning to
soften.

Mix the black bean sauce with the
water. Add to the wok and cook for 3 to 4
minutes. Stir in the bean sprouts and cook for 1
minute more, until all the vegetables are coated
in the sauce. Serve with rice.
