Vegetarian Recipes - Bubble Squeak Recipe

Ingredients

  • 450g/1lb potatoes (diced)

  • 225g/8oz Savoy cabbage (shredded)

  • 5 tablespoons vegetable oil

  • 2 leeks (chopped)

  • 1 garlic cloves (crushed)

  • 225g/8oz smoked tofu (cubed)

  • Salt and pepper

Serves 4


Method:

  1. Cook the diced potatoes in a saucepan of lightly salted boiling water for 10 minutes, until tender. Drain and mash the potatoes.

  2. In a separate saucepan, blanch the cabbage in boiling water for 5 minutes. Drain well and add to the potato.

  3. Heat the oil in a heavy-based frying pan. Add the leeks, garlic and tofu and fry gently for 2 to 3 minutes. Stir into the potato and cabbage mixture.

  4. Carefully turn the whole mixture over and continue to cook over a moderate heat for a further 5 to 7 minutes, until crispy underneath. Serve immediately.
