Vegetarian Recipes - Chinese Salad Nests Recipe

Ingredients

For the potato nests:

  • 450g/1lb potatoes (grated)

  • 100g/4oz corn flour

  • Vegetable oil for frying

 For the salad:

  • 100g/4oz pineapple (cubed)

  • 1 green pepper (cut into strips)

  • 1 carrot (cut into strips)

  • 50g/2oz mangetout (thickly sliced)

  • 25g/1 oz bean sprouts

  • 2 spring onions (sliced)

For the dressing:

  • 1 tablespoon clear honey

  • 1 teaspoon soy sauce

  • 1 garlic clove (crushed)

  • 1 teaspoon lemon juice

Serves 4


Method:

  1. To make the nests, rinse the potatoes several times in cold water. Drain well on  kitchen paper so they are completely dry to prevent spitting when they are cooked in the fat. Place the potatoes in a mixing bowl. Add the corn flour, mixing well to coat the potatoes.

  2. Half fill a wok with vegetable oil and heat until smoking. Line a sieve with the potato mixture and press another sieve of the same size on top.

  3. Lower the sieves into the oil and cook for 2 minutes until the potato nest is golden brown and crisp. Remove from the wok, allowing the excess oil to drain off.

  4. Place the nest on a serving dish. Repeat 3 more times to use up all of the mixture and make a total of 4 nests. Leave to cool.

  5. Mix the salad ingredients together then spoon into the potato nests. Mix the dressing ingredients together in a bowl. Pour the dressing over the salad, and serve immediately.
