Recipe
Ingredients

275g/10oz channa
dal
-
1.2 liters/2pt
cold water
-
3 tablespoons
vegetable oil
-
2 medium onions
(finely chopped)
-
1 tablespoon ground coriander
-
1 tablespoon
ground cumin
-
2 teaspoons chili
powder
-
450g/1lb potatoes
(cut into small cubes)

4 tomatoes (chopped)
-
1 tablespoon garam
masala
-
450ml/3/4pt cold water
-
1 teaspoon salt
-

Serves 4-6
Method:
-
Pick over the
chana dal removing any stones or other debris.
Put the channa dal in a large bowl, pour over
the cold water and leave to soak for at least 8
hours, or preferably overnight.

Place the channa dal and soaking liquid in a saucepan and
bring to the boil.

Skim off the scum, half
cover the saucepan with a lid and simmer for 20
minutes or until soft and almost dry. Remove
from the heat. Drain and leave to cool.

Heat 2
tablespoons of the oil in a heavy, flameproof
casserole dish over a medium heat, add
the onions and cook gently, stirring frequently,
for about 10 minutes until softened.

Add the
remaining oil and when hot, add the coriander,
cumin and chili powder. Stir for 2 to 3
minutes. Add the channa dal and stir well to
mix.

Add the potatoes, tomatoes and garam
masala. Pour in the cold water and bring to the
boil, stirring constantly. Add the salt, and
pepper to taste, then lower the heat, cover and
simmer for 30 minutes or until the potato is
very soft.

Stir occasionally during the cooking
time and add more water if necessary. Transfer
to a warmed serving dish. Serve immediately.
