Vegetarian Recipes - Fresh Herb Risotto Recipe

Ingredients

  • 1 tablespoon olive oil

  • 1 onion (chopped)

  • 2 garlic cloves (chopped)

  • 225g/8oz risotto rice

  • 125ml/4fl oz dry white wine

  • 700ml/1 1/4pt hot vegetable stock

  • Salt and pepper

  • 3 tablespoons chopped dried mixed herbs

  • Grated zest of 1 lemon

Serves 4-6


Method:

  1. Heat the oil in a medium-sized saucepan and gently fry the onion and garlic until soft. Add the rice and stir over a low to medium heat for 1 to 2 minutes, then pour in the wine and let it sizzle.

  2. Pour in a third of the stock and stir well. Season to taste, then simmer until the stock is absorbed, stirring frequently.

  3. Add the remaining stock in two stages and continue to simmer and stir for about 15 to 20 minutes, or until all the liquid has been absorbed and the rice is tender.

  4. Remove from the heat and stir in 2 tablespoons of the fresh herbs and the lemon zest. Season well and garnish with the remaining herbs.
