Vegetarian Recipes - Greek Salad Recipe

Ingredients

  • 2 large tomatoes (each cut into B wedges)

  • 1 green pepper (sliced)

  • 1/2 medium cucumber (sliced)

  • 50g/2oz black olives (stoned)

  • 225g/8oz feta cheese (diced)

  • 8 tablespoons extra-virgin olive oil

  • 3 tablespoons lemon juice

  • Salt and pepper

  • Large pinch of dried oregano

  • Pitta bread, to serve

Serves 6


Method:

  1. Arrange the tomatoes, pepper, cucumber and olives in a salad bowl. Add the cheese and pour the oil and lemon juice over the top. Season well.

  2. Toss well and sprinkle with oregano. Serve with warm pitta bread.
