Ingredients

2 large tomatoes (each cut into

wedges)

1 green pepper (sliced)

1/2
medium cucumber (sliced)

50g/2oz black olives (stoned)

225g/8oz feta cheese
(diced)

8 tablespoons extra-virgin olive oil
-
3 tablespoons
lemon juice
-
Salt and pepper
-
Large pinch of dried oregano
-
Pitta bread, to serve
Serves 6
Method:
-
Arrange the tomatoes, pepper, cucumber and olives in
a salad bowl. Add the cheese and pour the oil and
lemon juice over the top. Season well.

Toss well and
sprinkle with oregano. Serve with warm pitta bread.
