Vegetarian Recipes - Green Bean Tomato Tagliatelle Recipe

Ingredients

  • 350g/12oz green beans

  • 1 garlic clove (peeled)

  • 150ml/1/4pt double cream

  • 6 plum tomatoes (chopped)

  • 3 tablespoons chopped fresh basil leaves

  • 350g/12oz egg tagliatelle

  • 50g/2oz Parmesan cheese (grated)

Serves 4


Method:

  1. Cook green beans in boiling salted water for 8 minutes or until tender, then drain.

  2. Place the garlic in a pan with the cream and bring to the boil. Remove the garlic and add the tomato, green beans and basil. Stir to combine.

  3. Cook the tagliatelle in a large saucepan of boiling salted water for about 8 minutes or until al dente. Drain, and add to the tomato and beans. Serve with Parmesan cheese.
