Indian Green Bean Stir-Fry

Ingredients

4 tablespoons
vegetable oil
-
1 teaspoon mustard
seeds
-
10 curry leaves
-
1 teaspoon urad
dal
-
2 dried red
chilies
-
100g/4oz onions
(finely chopped)
-
3 green chilies
(deseeded and halved lengthways]
-
1 teaspoon ground
turmeric
-
200g/7oz green beans (finely chopped)
-
4
tablespoons water
-
50g/2oz freshly
grated coconut
-
Salt
Serves 4
Method:
-
Heat the oil in a large frying pan or wok. Add the
mustard seeds and, as they begin to pop, add the
curry leaves, urad dal and dried chilies. Cook,
stirring, until the urad dal turns golden.

Add the onions and stir-fry for 5 minutes or until
the onions are soft. Add the green chilies and
turmeric and cook for another 2 minutes.

Stir in
the beans and water. Lower the heat to minimum,
cover the pan and cook for 10 minutes, stirring
occasionally.

Add the coconut and some salt to
taste. Raise the heat to medium and stir-fry the
mixture for 5 minutes. Remove from the heat and
serve.
