Potato, Apple and Bean Salad

Ingredients

225g/8oz new
potatoes (quartered)
-
225g/8oz mixed canned beans
-
1 red dessert
apple (diced and tossed in 1 tablespoon
lemon juice)
-
1 small yellow
pepper (diced)
-
1 shallot
(sliced)
-
1/2 head
fennel (sliced)
-
Crisp lettuce
leaves
For the dressing:
-
1 tablespoon
red wine vinegar
-
2 tablespoons olive oil
-
1/2
tablespoon American mustard
-
1 garlic cloves
(crushed)
-
2 teaspoons
chopped fresh thyme
Serves 4
Method:

Cook the potatoes in a saucepan of boiling water
for 15 minutes until tender.

Drain and
transfer to a mixing bowl. Add the potatoes to
the mixed beans with the apple and yellow
pepper, and the shallots and fennel. Mix well,
taking care not to break up the cooked potatoes.

In a bowl, whisk all the dressing ingredients
together. Pour the dressing over the salad.

Line a plate or salad bowl with the lettuce
leaves and spoon the salad in the centre. Serve
immediately.
