Vegetarian Recipes - Potato Hash Recipe

Ingredients

  • 25g/1oz butter

  • 1 red onion (sliced)

  • 1 carrot (diced)

  • 25g/1oz French beans (trimmed and halved)

  • 3 large potatoes (diced)

  • 2 tablespoons plain flour

  • 600ml/1pt vegetable stock

  • 225g/8oz tofu (diced)

  • Salt and pepper

Serves 4


Method:

  1. Melt the butter in a frying pan. Add the onion, carrot, French beans and potatoes and fly gently, stirring, for 5 to 7 minutes or until the vegetables begin to brown.

  2. Add the flour to the frying pan and cook for 1 minute, stirring constantly.

  3. Gradually pour in the stock. Reduce the heat and leave the mixture to simmer for 15 minutes or until the potatoes are tender.

  4. Add the diced tofu to the mixture and cook for a further 5 minutes, and season to taste with salt and pepper. Serve hot from the pan.
