Vegetarian Recipes - Potato Salad with Mustard Dressing Recipe

Ingredients

  • 900g/2lb new potatoes

  • 100g/4oz natural yogurt

  • 3 tablespoons mayonnaise

  • 1 tablespoon coarse grain mustard

  • Salt and pepper

  • 1 small bunch fresh chives

Serves 4-6


Method:

  1. Put the potatoes in a saucepan of salted boiling water, bring back to the boil and cook for 20 to 25 minutes until just tender.

  2. Drain the potatoes and plunge into a bowl of iced water for 5 minutes to stop them cooking. Drain well and leave to cool.

  3. Mix the yogurt, mayonnaise and mustard together in a large bowl and season with salt and pepper. Add the potatoes. Using scissors, snip most of the chives over the potatoes.

  4. Fold the potatoes in the dressing until evenly coated. Garnish with the remaining chives.
