Vegetarian Recipes - Tabbouleh Recipe

Ingredients

  • 225g/8oz cracked wheat (washed and drained)

  • 4 medium-sized tomatoes (diced)

  • 25g/1oz fresh mint (finely chopped)

  • 1 onion (finely sliced)

  • 50g/2oz fresh flat-leaf parsley (coarsely chopped)

  • 25g/1oz fresh coriander (coarsely chopped)

  • Grated zest and juice of 1 lemon

  • 2 tablespoons extra-virgin olive oil

  • Salt and pepper

  • 2 mint sprigs to garnish

 

Serves 4-6


Method:

  1. Mix together the wheat, tomatoes, mint, onion, parsley and coriander into a salad bowl. Add the lemon  and olive oil, together with seasoning to taste.

  2. Serve at room temperature, garnished with the mint sprigs. Serve with warm pitta bread.
