Ingredients

225g/8oz
cracked wheat (washed and drained)

4 medium-sized
tomatoes (diced)

25g/1oz fresh mint (finely
chopped)

1 onion (finely sliced)
-
50g/2oz fresh
flat-leaf parsley (coarsely chopped)
-
25g/1oz fresh
coriander (coarsely chopped)
-
Grated zest
and juice of 1 lemon
-
2
tablespoons extra-virgin olive oil
-
Salt and
pepper
-
2 mint sprigs
to garnish
Serves 4-6
Method:
-
Mix together the
wheat, tomatoes, mint, onion, parsley and coriander
into a salad bowl. Add the lemon and olive
oil, together with seasoning to taste.
-
Serve at
room temperature, garnished with the mint sprigs.
Serve with warm pitta bread.
