Tagliatelle with
Lemon Sauce

Ingredients

50g/2oz butter
-
350ml/12fl oz double
cream
-
Grated zest of 4 large lemons
-
50ml/2fl oz brandy
-
Salt
-
White pepper
-
500g/1lb 2oz fresh tagliatelle
-
4 tablespoons
grated Parmesan cheese
Serves 4
Method:

Melt the butter in a
wide frying pan over a medium-low heat. Add the
cream, half the lemon zest and the brandy. Increase
the heat to medium and cook for 3 to 5 minutes, or
until the cream has come to a simmer. Sprinkle in
the remaining lemon zest and season to taste. Remove
from the heat.

Bring a large saucepan of salted
water to the boil. Add the fresh tagliatelle. Return to the boil and then cook for 15 seconds.
Drain the tagliatelle and add to the frying pan with
the sauce.

Toss everything together and serve with 1
tablespoon of Parmesan sprinkled over each serving.
