Recipe
Ingredients

1 head of broccoli
(cut into florets)
-
100g/4oz mangetouts
(top and tailed)
-
100g/4oz fine green beans (topped and
tailed)
-
4 spring onions
(halved)
-
Salt and pepper
For the dressing:
-
2.5cm/1in piece of
fresh root ginger (peeled and grated)
-
1 garlic clove
(crushed)
-
75ml/3fl oz sunflower oil
-
3 tablespoons rice
vinegar
Serves 4
Method:
-
For the dressing, place the ginger and garlic in a
bowl and mix together with the back of a spoon to
form a paste. Whisk in the oil and vinegar.

Cook
the broccoli in a saucepan of boiling water for 4
minutes. In a separate
pan of boiling salted
water, cook the mangetouts and beans for 2 minutes.

Drain the vegetables
well and turn into a bowl.

Add the spring
onions to the vegetables and pour the dressing over
the top.

Add salt and pepper to taste and toss
gently to mix. Serve with rice.
