Vegetarian Recipes - Three Green Salad Recipe

Ingredients

  • 1 head of broccoli (cut into florets)

  • 100g/4oz mangetouts (top and tailed)

  • 100g/4oz fine green beans (topped and tailed)

  • 4 spring onions (halved)

  • Salt and pepper

For the dressing:

  • 2.5cm/1in piece of fresh root ginger (peeled and grated)

  • 1 garlic clove (crushed)

  • 75ml/3fl oz sunflower oil

  • 3 tablespoons rice vinegar

Serves 4


Method:

  1. For the dressing, place the ginger and garlic in a bowl and mix together with the back of a spoon to form a paste. Whisk in the oil and vinegar.

  2. Cook the broccoli in a saucepan of boiling water for 4 minutes. In a separate pan of boiling salted water, cook the mangetouts and beans for 2 minutes.

  3. Drain the vegetables well and turn into a bowl.

  4. Add the spring onions to the vegetables and pour the dressing over the top.

  5. Add salt and pepper to taste and toss gently to mix. Serve with rice.
