Ingredients

3 tablespoons
vegetable oil

225g/8oz firm tofu (cut into strips)

2
garlic cloves (crushed)
-
3 spring onions
(chopped)
-
2 green chilies
(finely chopped)

175g/6oz French beans
-
175g/6oz baby
sweet corn (halved)

100g/4oz
bean sprouts
-
100g/4oz hard
white cabbage (shredded)
-
3 tablespoons
smooth peanut butter
-
1 1/2 tablespoons soy sauce
-
300ml/1/2pt coconut milk
Serves 4
Method:
-
Heat 2 tablespoons of
the oil in a large wok. When the oil is hot, add the
tofu, stir-fry for 3 minutes and remove. Set aside.
Wipe out the wok with kitchen paper.

Add the
remaining oil. When it is hot, add the garlic,
spring onions and chilies and stir-fry for 1
minute. Add the French beans, sweet corn, bean sprouts
and white cabbage and stir-fly for a further 2
minutes.

Then add the peanut butter and soy sauce to
the wok. Stir well to coat the vegetables. Add the
tofu to the vegetables in the wok.

Pour the
coconut milk over the vegetables, simmer for 3
minutes and serve immediately with rice or noodles.
