Vegetarian Recipes - Vegetable Curry Recipe

Ingredients

  • 2 tablespoons vegetable oil

  • 1 onion (thinly sliced)

  • 2 carrots (diced)

  • 1 baking potato (diced)

  • 1 tablespoon mild curry powder

  • Pinch of chili powder

  • 1 courgette (diced)

  • 2 large tomatoes (diced)

  • 225ml/8fl oz cold water

  • Salt and pepper

 

Serves 4-6


Method:

  1. Heat the oil in a flameproof casserole dish until hot, then add the onion, carrots, potato, curry powder and chili powder. Stir-fry over a low heat for 5 minutes.

  2. Add the courgette, tomatoes, cold water and salt and pepper to taste. Bring to the boil, stirring, then cover and simmer over a low heat for 20 minutes, or until the vegetables are tender.

  3. Stir and check several times during cooking and add more water if the vegetables are dry. Serve hot with rice.
