Vegetarian Recipes - Veggie Burgers Recipe

Ingredients

  • 100g/4oz green beans

  • 100g/4oz cracked wheat

  • 225ml/8fl oz boiling water

  • 1 small courgette

  • 1 small carrot (peeled)

  • 1/2 Granny Smith apple (peeled)

  • 100g/4oz canned chickpeas (rinsed and drained)

  • 1 tablespoon minced onion

  • 1 tablespoon peanut butter

  • 1 1/2 tablespoons vegetable oil

  • 1/2 teaspoon curry powder

  • 1/2 teaspoon chili powder

  • Salt and pepper

  • 100g/4oz breadcrumbs

Serves 2


Method:

  1. Cook green beans in boiling water until tender. Drain and chop finely.

  2. Cook the cracked wheat in the boiling water for 1 minute. Remove from the heat and cover.

  3. Grate the courgette, carrot and apple. Place in a tea towel and squeeze out excess moisture. Combine with the green beans in a mixing bowl.

  4. In a blender or food processor blend the chickpeas. onion, peanut butter, vegetable oil, curry powder and chili powder until smooth. Season with salt and pepper. Add to the grated vegetables.

  5. Drain the cracked wheat through a strainer. pressing with the back of a spoon to extract excess liquid. Add to the bowl. Add the bread crumbs and refrigerate for 1 hour. With wet hands. shape into 4 burgers.

  6. Cook under a medium grill for 3 minutes on each side.
