Vegetarian Recipes - Waldorf Salad Recipe

Ingredients

  • 450g/1lb eating apples (cored and diced)

  • 2 tablespoons lemon juice

  • 1 teaspoon sugar

  • 150ml/1/4pt mayonnaise

  • 1/2 head celery (sliced)

  • 50g/2oz walnuts (chopped)

  • 1 lettuce

Serves 4


Method:

  1. Toss the diced apples in the lemon juice, sugar and 1 tablespoon of the mayonnaise and leave to stand for about 30 minutes.

  2. Just before serving, add the sliced celery, chopped walnuts and the remaining mayonnaise, and toss together. Serve in a bowl lined with lettuce leaves.
