Breads, Biscuits and Cakes Recipes - Almond Macaroons

Ingredients

  • Rice paper

  • 100 g/4 oz/1/2 cup caster (superfine) sugar

  • 50 g/2 oz/1/2 cup ground almonds

  • 5 ml/1 tsp ground rice

  • A few drops of almond essence (extract)

  • 1 size 1 egg white

  • Halved blanched almonds


Method:

  1. Line a baking sheet with rice paper. Mix all the ingredients except the blanched almonds together to form a stiff paste.

  2. Beat well, then place spoonfuls of the mixture a little apart on the rice paper.

  3. Top each with a halved almond and bake for 25 minutes at 160°C/325°F/gas mark 3.

  4. Leave to cool on the baking sheet, then cut round each macaroon with scissors.
