Almond Macaroons
Ingredients

Rice paper
-
100 g/4 oz/1/2 cup
caster (superfine) sugar
-
50 g/2 oz/1/2 cup
ground almonds
-
5 ml/1 tsp ground rice
-
A few drops of
almond essence (extract)
-
1 size 1 egg white
-
Halved blanched
almonds
Method:
-
Line a baking sheet
with rice paper. Mix all the ingredients except the
blanched almonds together to form a stiff paste.

Beat well, then place spoonfuls of the mixture a
little apart on the rice paper.

Top each with a
halved almond and bake for 25 minutes at
160°C/325°F/gas mark 3.

Leave to cool on the baking
sheet, then cut round each macaroon with scissors.
