Breads, Biscuits and Cakes Recipes - Almond Rice Cake

Ingredients  

  • 225 g/8 oz/1 cup butter or margarine

  • 225 g/8 oz/1 cup caster (superfine) sugar

  • 3 eggs, beaten

  • 100 g/4 oz/1 cup plain (all-purpose) flour

  • 75 g/3 oz/3/4 cup self-raising (self­rising) flour

  • 75 g/3 oz/3/4 cup ground rice

  • 2.5 ml/1/2 tsp almond essence (extract)


Method:

  1. Beat the fat and sugar together until light and fluffy. Beat in the egg a little at a time.

  2. Sift the flours together and fold in with the ground rice and almond essence.

  3. Turn into a greased and lined 20 cm/8 in round cake tin (pan) and bake at 150°C/300°F/gas mark 2 for 1 1/4 hours or until firm to the touch.

  4. Cool in the tin for 10 minutes, then turn out on to a wire rack to cool completely.
