Breads, Biscuits and Cakes Recipes - Angel's Food Cake

Ingredients  

  • 4 egg whites

  • 2.5 ml/1/2 tsp cream of tartar

  • A few drops of vanilla essence (extract)

  • 150 g/5 oz/2/3 cup caster (superfine) sugar

  • 50 g/2 oz/1/2 cup plain (all-purpose) flour

  • 15 g/1 tbsp rice flour

  • A pinch of salt

  • A little vanilla-flavored glace icing


Method:

  1. Dust a plain ring mould (mold) with flour (do not grease). Whisk the egg whites until frothy.

  2. Whisk in the cream of tartar and vanilla essence until stiff. Sift the sugar, flours and salt together twice.

  3. Fold a little at a time into the egg whites, using a metal spoon.

  4. Turn into the ring mould. Level the surface and bake at 160°C/325°F/gas mark 3 for about 30 minutes until firm.

  5. Leave the cake to cool in the tin. Loosen the edge, turn out and spoon a little glace icing over before serving.
