Breads, Biscuits and Cakes Recipes - Brown Rice and Sunflower Bites

Ingredients

  • 75 g/3 oz/3/4 cup cooked brown rice

  • 50 g/2 oz/1/2 cup sunflower seeds

  • 25 g/1/4 cup sesame seeds

  • 40 g/1/4 cup seedless (pitless) raisins

  • 40 g/1/4 cup glace (candied) cherries, quartered

  • 25 g/1 oz/2 tbsp dark brown sugar

  • 15 ml/1 tbsp clear honey

  • 75 g/3 oz/1/3 cup butter

  • 5 ml/1 tsp lemon juice


Method:

  1. Mix together the rice, seeds and fruit. Melt the sugar, honey, butter and lemon juice in a saucepan.

  2. Stir into the rice mixture and mix well. Divide the mixture between 12­15 paper cases on a baking sheet.

  3. Bake at 200°C/400°F/gas mark 6 for 15 minutes. Cool on a wire rack and store in an airtight tin.
