Breads, Biscuits and Cakes Recipes - Chocolate Coconut Crunchies

Ingredients

  • 100 g/4 oz/1 cup plain (semi-sweet) chocolate, broken into pieces

  • 30 ml/2 tbsp milk

  • 30 ml/2 tbsp golden (light corn) syrup

  • 100 g/4 oz/4 cups puffed rice breakfast cereal

  • 50 g/2 oz/1/2 cup desiccated (shredded) coconut

  • Paper cake cases (cupcake papers)


Method:

  1. Melt the chocolate, milk and syrup in a saucepan.

  2. Remove from the heat and stir in the rice cereal and coconut.

  3. Put a spoonfuls into the cake cases and leave to set and serve.
