Breads, Biscuits and Cakes Recipes - Country Griddle Cakes

Ingredients  

  • 25 g/1 oz/2 tbsp butter, melted

  • 100 g/4 oz/1/2 cup cottage cheese with chives

  • 2 eggs, beaten

  • 40 g/1/3 cup plain (all-purpose) flour

  • 15 g/2 tbsp rice flour

  • 5 ml/1 tsp baking powder

  • 15 ml/1 tbsp milk

  • Sunflower oil


Method:

  1. Mix the butter with the cheese and beat in the remaining ingredients except the oil to form a thick batter.

  2. Heat a little oil in a frying pan (skillet). Drain off the excess. Fry (sauté) spoonfuls of the mixture in the pan until the undersides are golden.

  3. Turn over with a palette knife and cook the other sides. Wrap in a clean napkin while cooking the remainder. Serve hot.
