Griddle Cakes
Ingredients

25 g/1 oz/2 tbsp
butter, melted
-
100 g/4 oz/1/2 cup
cottage cheese with chives
-
2 eggs, beaten
-
40 g/1/3 cup
plain (all-purpose) flour
-
15 g/2 tbsp rice flour
-
5 ml/1 tsp baking
powder
-
15 ml/1 tbsp milk

Sunflower oil
Method:
-
Mix the butter with the cheese and beat in the
remaining ingredients except the oil to form a thick
batter.

Heat a little oil in a frying pan
(skillet). Drain off the excess. Fry (sauté)
spoonfuls of the mixture in the pan until the
undersides are golden.

Turn over with a palette
knife and cook the other sides. Wrap in a clean
napkin while cooking the remainder. Serve hot.
