Breads, Biscuits and Cakes Recipes - Grantham Gingerbreads

Ingredients

  • 225 g/8 oz/2 cups plain (all-purpose) flour

  • 2.5 ml/1/2 tsp ground mace

  • 10 ml/2 tsp ground ginger

  • 75 g/3 oz/1/3 cup butter

  • 175 g/3/4 cup caster (superfine) sugar

  • 1 size 4 egg, beaten

  • 15 ml/1 tbsp lemon juice

  • 30 ml/2 tbsp ground rice


Method:

  1. Sift the flour and spices into a bowl. Rub in the butter, then stir in the sugar.

  2. Mix with the egg and lemon juice to form a firm dough. Knead gently. Dust a work surface liberally with the ground rice.

  3. Roll out the dough to about 1 cm/1/2 in thick. Cut into rounds with a large biscuit cutter.

  4. Transfer to greased baking sheets and bake for 20 minutes at 180°C/350°F/gas mark 4 until firm to the touch.

  5. Cool slightly, then transfer to a wire rack to cool completely.
