Grantham Gingerbreads
Ingredients

225 g/8 oz/2 cups plain (all-purpose)
flour
-
2.5
ml/1/2 tsp ground mace
-
10 ml/2 tsp ground ginger
-
75 g/3 oz/1/3 cup butter
-
175 g/3/4 cup caster (superfine)
sugar
-
1
size 4
egg, beaten
-
15 ml/1 tbsp lemon juice
-
30 ml/2 tbsp ground rice
Method:

Sift the flour and spices into a bowl. Rub in the
butter, then stir in the sugar.

Mix with the egg and
lemon juice to form a firm dough. Knead gently. Dust
a work surface liberally with the ground rice.

Roll
out the dough to about 1 cm/1/2 in thick. Cut into
rounds with a large biscuit cutter.

Transfer to
greased baking sheets and bake for 20 minutes at
180°C/350°F/gas mark 4 until firm to the touch.

Cool
slightly, then transfer to a wire rack to cool
completely.
