Ingredients

3 egg whites

175 g/6
oz/3/4
cup caster (superfine) sugar
-
25 g/1 oz/2 tbsp
ground rice
-
150 g/5 oz/1 1/4
cups ground hazelnuts
Method:

Whisk the egg whites until stiff. In a separate bowl, mix the sugar,
ground rice and hazelnuts together and fold in with
a metal spoon.

Spread to about 2 cm/3/4 in
thick on a piece of non-stick baking parchment on a
baking sheet.

Bake at 180°C/350°F/gas mark 4 for
15-20 minutes until golden and crisp.
-
Cut into
squares, turn over carefully and dry off in the
oven, turned down to 140°C/275°F/gas mark 1 for 15
minutes.
