Breads, Biscuits and Cakes Recipes - Hazelnut Dreams

Ingredients

  • 3 egg whites

  • 175 g/6 oz/3/4 cup caster (superfine) sugar

  • 25 g/1 oz/2 tbsp ground rice

  • 150 g/5 oz/1 1/4 cups ground hazelnuts


Method:

  1. Whisk the egg whites until stiff. In a separate bowl, mix the sugar, ground rice and hazelnuts together and fold in with a metal spoon.

  2. Spread to about 2 cm/3/4 in thick on a piece of non-stick baking parchment on a baking sheet.

  3. Bake at 180°C/350°F/gas mark 4 for 15-20 minutes until golden and crisp.

  4. Cut into squares, turn over carefully and dry off in the oven, turned down to 140°C/275°F/gas mark 1 for 15 minutes.
