Recipes - Lemon Butter Biscuits
Ingredients

100 g/4 oz/1 cup
ground rice
-
100g/4 oz/1 cup plain (all-purpose) flour
-
75 g/3 oz/1/3 cup
caster (superfine) sugar
-
A pinch of salt
-
2.5 ml/1/2 tsp baking
powder
-
100 g/4 oz/1/2 cup
butter
-
Grated rind of
1 lemon
-
1 egg, beaten
Method:
-
Mix the ground rice,
flour, sugar, salt and baking powder together in a
bowl.

Rub in the butter until the mixture resembles
fine breadcrumbs.
-
Stir in the lemon rind and mix
with enough of the egg to form a firm dough.

Knead
gently, then roll out on a floured surface and cut
into shapes with a biscuit cutter.
-
Place on a
greased baking sheet and bake at 180°C/350°F/gas
mark 4 for 30 minutes.

Cool slightly then transfer
to a wire rack to cool completely.
