Breads, Biscuits and Cakes Recipes - Lemon Butter Biscuits

Ingredients

  • 100 g/4 oz/1 cup ground rice

  • 100g/4 oz/1 cup plain (all-purpose) flour

  • 75 g/3 oz/1/3 cup caster (superfine) sugar

  • A pinch of salt

  • 2.5 ml/1/2 tsp baking powder

  • 100 g/4 oz/1/2 cup butter

  • Grated rind of 1 lemon

  • 1 egg, beaten


Method:

  1. Mix the ground rice, flour, sugar, salt and baking powder together in a bowl.

  2. Rub in the butter until the mixture resembles fine breadcrumbs.

  3. Stir in the lemon rind and mix with enough of the egg to form a firm dough.

  4. Knead gently, then roll out on a floured surface and cut into shapes with a biscuit cutter.

  5. Place on a greased baking sheet and bake at 180°C/350°F/gas mark 4 for 30 minutes.

  6. Cool slightly then transfer to a wire rack to cool completely.
