Breads, Biscuits and Cakes Recipes - No-bake Chestnut Slice

Ingredients

  • 225 g/8 oz/2 cups plain (semi-sweet) chocolate, broken into pieces

  • 100 g/4 oz/1/2 cup butter, softened

  • 100 g/4 oz/1/2 cup caster (superfine) sugar

  • 450 g/16 oz/1 large can unsweetened chestnut puree

  • 25 g/1 oz/1/4 cup rice flour

  • A few drops of vanilla essence (extract)

  • 150 ml/2/3 cup whipping cream

  • Grated chocolate


Method:

  1. Melt the chocolate in a bowl over a pan of hot water or in the microwave. Cream the butter and sugar until light and fluffy.

  2. Beat in the puree, melted chocolate, rice flour and a few drops of vanilla essence.

  3. Turn into a greased 450 g/1 lb loaf tin, lined with non-stick baking parchment. Chill until firm.

  4. Turn out on to a serving plate and remove the paper. Decorate with whipped cream and grated chocolate before serving.
