Breads, Biscuits and Cakes Recipes - Pasta Coconut Bites

Ingredients

  • 900 ml/3 3/4 cups water

  • 225 g/8 oz/2 cups soup pasta shapes

  • 225 g/8 oz/1 cup dark brown sugar

  • 2.5 ml/1/2 tsp salt

  • 100 g/4 oz/1 cup sweetened desiccated (shredded) coconut

  • A few drops each of green and pink food coloring

  • Paper cake cases (cupcake papers)


Method:

  1. Bring the water to the boil, add the pasta, sugar and salt and simmer for about 15 minutes until the pasta is soft and the mixture is thick.

  2. Turn into a shallow greased tin (pan) and leave to cool. Color half the coconut green and half pink.

  3. Take spoonfuls of the mixture, roll into balls, then roll half of the balls in the green coconut, the other in pink, to coat completely.

  4. Place in paper cases to serve as cakes for tea or as sweetmeats with after-dinner coffee.
