Breads, Biscuits and Cakes Recipes - Portuguese Coconut Cake

Ingredients  

  • 4 eggs, separated

  • 450 g/1lb/2 cups caster (superfine) sugar

  • 450 g/1lb/4 cups desiccated (shredded) coconut

  • 100 g/4 oz/1 cup rice flour

  • 50 ml/2fl oz/3 1/2 tbsp rose water

  • 1.5 ml/1 /4 tsp ground cardamom

  • 1.5 ml/1/4 tsp ground cinnamon

  • A pinch of ground cloves

  • A pinch of ground mace

  • 25 g1 oz/1/4 cup slivered almonds


Method:

  1. Put the egg yolks in a bowl with the sugar and beat well. Stir in the coconut, then fold in the flour.

  2. Stir in the rose water and spices. Whisk the egg whites until stiff and fold into the mixture with a metal spoon.

  3. Pour into a greased baking tin (pan) and sprinkle the almonds over the top.

  4. Bake at 180°C/350°F/gas mark 4 for about 50 minutes or until a skewer inserted in the centre comes out clean.

  5. Leave to cool in the tin for 10 minutes, then cut into squares.
